Unleavened Bread Treats!

With the Days of Unleavened Bread just around the corner, I thought I would share two recipes that I invented for some healthy yet scrumptious unleavened treats.

 

Raisin Oat Cookies

 Using the blade attachment of your food processor, make into a flour:

1 cup oats

2/3 cup coconut

2/3 cup almonds

Then, using the kneading attachment mix in the following:

2/3 cup sunflower seeds

Pinch of salt

1 cup raisins (presoaked for several minutes in hot water to soften)

1 tablespoon honey

1 tablespoon molasses

Form into cookies (with wet hands to prevent sticking) and bake at 180°C for 10-12 minutes

Almond Chocolate Brownies

Using the blade attachment of your food processor, make into a flour:

1 cup oats

½ cup coconut

4 tablespoons dutch cocoa powder

Once a flour is created, add in:

½ cup almonds

Blend again to roughly chop the almonds – leave them quite chunky for some crunch

Then, using the kneading attachment mix in the following:

1 ¼ cups raisins (presoaked for several minutes in hot water to soften)

1 tablespoon honey

1 tablespoon molasses

1 teaspoon vanilla essence

Blend the wet ingredients with the dry until mixture binds well together. Press mix into a flat square and cut into smaller squares to make “brownies” or form cookie shapes with hands (dipped in water to prevent sticking). Bake at 180°C for 10-12 minutes.
